Hard steels will produce an edge that will last longer, which means you’ll have to sharpen less, but there is a decided advantage to a softer steel in the kitchen.

One, it will be less likely to chip, which is big. The other is that it will be easier for you to restore your edge when you do need to sharpen it.

All in all, you’ll have to sharpen soft steel more, but it should be easier to do.

Full-Tang Construction

There are some kitchen knives that are made with stick tangs and some of them sport solid construction, but by and large, you should look for a knife set that features full-tang construction.

Look for a knife set wherein you can see the tang extended fully to the edge of the scales, and which has scales that are either riveted or bolted on.

Full-tang kitchen knives are stronger than those with stick tangs, making them more valuable overall.
